Pear Cranberry and Ginger Cobbler
filling
6 ripe pears peeled ,cored, sliced and cut into 1 inch cubes
3/4 cup dried sweetened cranberries
3/4 cup sugar
1/2 cup fresh orange juice
1/4 cup coarsely chopped crystallized ginger
2 tbls flour
1 tbls cornstarch
1 tsp finely grated orange peel
1 tbls Grand Marnier (optional)
topping
1 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tbls butter cut into 1/2 inch cubes
3/4 cup heavy cream
2 tbls brown sugar or coarse sugar
You start with six fresh ripe pears....I would like to add that this colander is my oldest kitchen item, I bought it at Pier 1 imports when I was 16 and put in in my hope chest...I still love yellow....
you cut the pears up into chunks like this....I bet you could leave the peelings on....if someone does let me know how that worked....
add the sugar, flour, cornstarch, cranberries, orange juice and the orange peel...then
give your ginger a little more of a dice...and add to the bowl...
give it a quick stir and put in a 1 1/2 quart baking dish...or a cast iron skillet would be great too!
make a small one for your mother or neighbor...it is the right thing to do.....then
mix the flour, baking powder, salt together and cut in the butter with a fork.....pour in the heavy cream and mix until it all comes together.....then
drop the dough by the teaspoonful onto the cobbler, breaking up some with your fingers to cover the whole thing...and sprinkle the sugar all over the top......bake at 375 degree for just over an 1 hour..... and ...
you will have the best smelling kitchen and your family will love you more!!! And isn't that the reason we live?
