Chocolate Cake in a cup....


Is that called a cupcake then? If like me, you don't want to make a whole cake or pan of brownies...because like me, you would eat the whole pan...and that would not be good....but wouldn't it be nice to just have a little chocolate something sometimes? I know me too....So here is this greatest, of great recipes....you make the mix ahead and voila, in 2 minutes you have cake to eat while watching late night TV...or reading a great book.... or that consolation chocolate fix, you know the one I am talking about, right?

What you'll need:


1 pkg. chocolate cake mix (Pillsbury, Betty Crocker, generic, whatever you like)
1 pkg. (3.9 oz.) instant chocolate pudding mix (instant)

Mix these together and package up in a large mason jar, gallon ziplock bag, etc. This is your base for many, many, ooey, gooey, chocolate fantasms of joy.
1/2 c. chocolate cake/pudding mix
1 heaping Tbsp. sour cream or yogurt
1 Tbsp. oil
1/4 c. coffee (I usually just grab whatever is left over from the coffee pot. You can use water here, as well)
1 Tbsp. chocolate chips (optional) (the mini ones work best)or (break up a candy bar or mini marshmallows)

Mix up your ingredients and spoon into a coffee mug that you've sprayed with non-stick spray. Now, all mugs are not created equal. Make sure your mug is microwavable and don't fill the mug more than halfway with your batter. As a tiny, chocolate Chernobyl may result in your microwave.

Microwave on full power for about two to two and a half minutes. Again, all microwaves are not created equal. If you have an ancient one, it may take a few seconds longer than a brand new, technologically advanced zapper.
The cake will rise, then fall


just mix any brand chocolate cake mix and the small pkg of instant jello....

mix up good together with a spoon or whisk.....

and store in a plastic container you saved from costco....

put all ingredients in small bowl.....I want to add here that this will work nicely with just 1/2 cup mix and 1/4 cup of water, and will work if you mix right in the cup with no spray on the sides...(then there is just a cup and 2 spoons to wash, and the ice cream scoop)

mix up thoroughly.......

place in oiled cup, I used this clear cup so you can see the cake but for myself I would use my bigger cup, the one that I use for soup or a large cup of tea, when I don't want to use a teapot, you have that cup too right?......microwave for 2 minutes, and...


you have the best little snack, portioned perfectly! ....There is enough room for adding ice cream, whip cream or heck just pour cream right on top...You can curl up with your favorite book and
relax....ahhh

  2. Ok this just borders on obscene. I made this for the staff and it is so fabulous. Loaded with chocolate and all sorts of good things. They are all smiling now!!!!
