Fried Rice...

There is something so very comforting about Fried Rice...it can be a one dish meal or can be a side dish...Sometimes that is all you want for dinner, just a fast throw together rice dish...this recipe I learned from my sisters neighbor..she was married to a man from Thailand and she used to make this for us all sometimes...2 key ingredients...shredded cabbage and fish sauce...

you will need a half pound of chopped bacon, 1 cup of sliced celery, 1 bunch of green onion sliced, 3 cups of sliced cabbage...4 cups of cooked rice, fish sauce and soy sauce...and sliced mushrooms...I forgot them in the picture...sorry...

in a large skillet, fry the bacon until half cooked then add the celery and onions, and mushrooms...reserve some of the green onion tops to use later..

when that is cooked and brown, add the shredded cabbage...I buy the cabbage that is in a bag and shredded for coleslaw...so easy...and an added bonus - it has some shredded carrots and red cabbage...

pour soy sauce over the top quite liberally...about 4 tablespoons...

then the same with the fish sauce...this is a secret ingredient...it makes the fried rice....

add the rice and stir....

break 2 eggs in a dish and then...whip...         

make a well in the middle of the pan....

don't stir this into the rice until the eggs are almost finished! let the eggs come together first...then stir it in and add the reserved sliced green onion tops....mix it up and that is it!
