Asparagus with Orange Sauce...

This is a great twist on a basic hollandaise sauce...it is made, all in the double boiler pan....it is fresh and clean tasting...with just a small amount of time, and a nice piece of broiled fish or chicken, it will make a light lunch or dinner....you should always make it when there are other people there to eat it...never alone....oh my, the danger of being all alone with all this creamy, buttery, orange sauce....

Asparagus with Orange Sauce

24 fresh asparagus, medium size and trimmed
Orange Sauce:
2 egg yolks
juice of 1 orange
1/2 tsp orange rind grated
4 oz. butter, melted
1 tbsp whipping cream, lightly whipped
salt and pepper to taste

1. Blanch asparagus for 5 minutes in a large pot of boiling salted water..drain and keep the asparagus warm on a serving platter.
2. Using a stainless steel bowl, whisk the egg yolks, orange juice and grated rind over a double boiler until the mixture becomes frothy and thick...coats a back of a spoon...
3. Remove the bowl from the heat and slowly incorporate the melted butter. Then fold in the lightly whipped cream...add salt and pepper to taste.
4. Pour the sauce in a warm sauce boat and serve with the asparagus....

put the orange juice, grated orange rind and egg yolks in the top of a double boiler...

whisk until frothy.....place on the double boiler, water boiling in the bottom...

cook whisking until it is thick enough to coat the back of a spoon...about 5 minutes...

measure cream in a bowl and whisk until frothy, do not turn to whip cream...

when the sauce is thick, add the melted butter slowly while whisking....(and trying to take a picture at the same time)

slowly add the cream...just stirring until blended.....

and that is it!

drain your asparagus...and rinse quickly with cold water...so it stays tender crisp...

Time to serve! be sure and serve extra sauce on the side.....trust me you will want more....
