Scones...

I really only had 2 of these, honestly and second one had no butter...really....they are so simple and tender and cakish....perfect for a Saturday or Sunday morning with coffee....

Scones

3 cups of flour
1 cup of sugar
1 tablespoon of baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups of whole or low fat plain yogurt
2 eggs
1 stick butter melted and cooled

heat oven to 375 degrees....Whisk the dry ingredients together and
then in a separate bowl whip the eggs and add the yogurt and then melted butter.
make a well in the dry ingredients and add the wet ingredients...fold all together being sure not to over mix...
divide the dough in two and make each into rounds...cut in half and then each half in to 3 wedges...bake 20 minutes...cool slightly and eat with butter and jam...

There are many variations to this recipe...the ones I made I grated orange peel into the dry ingredients and topped with candied sliced almonds..and filled with lingonberry...
but folding blueberry's in would be great, with a little lemon peel and put large grate sugar on top before baking would be good.
Dried cranberry would be good with the orange and walnut...

whisk all the dry ingredients...together...

all the wet ingredients...I used goat yogurt and it worked great, if you would like to do that...

this picture is for Sherry so she can see my mess....

the wet into the dry and fold all together.....

spread out on board and cut into 12 wedges....

in the oven, starting to bake...I added nuts to the top...

holy cow these are so pretty!

I wanted you to see the inside....yes this was mine and it is kinda like 'showing your food'...sorry, that is not polite....

Cheers to Happy  !!
