Harvest Benedict....

This is a Benedict we make at the restaurant...is is wildly popular and very healthy, a geat beginning for these fall days.... It is easy to put together as long as everything is prepped and ready to go so lets get started!

sliced tomato, baby spinach leaves, canadian bacon (or thick sliced bacon) thick sliced mushrooms, avacado slices that are in 1/8's...and now we are ready!

get the eggs ready for the hollandaise....

fry the canadian bacon and mushrooms over medium heat...

poach the eggs to your desired doneness...I am sure that is a word.....

throw the spinach in the pan to wilt a little, it takes about 15 seconds for that to happen...

toast your muffins...and lets start building.....

ok here we go! first the canadian bacon.. then the spinach, then the tomatoe slice, then the mushrooms, then place the acacado wedges, making a little cradle for the eggs....the drizzle with the holladaise.....

So good and healthy and perfect for those fall mornings!
