Creme Brulee...

Creme Brulee
Creme Brulee is the best dessert in the whole world! Hands down...it is easy to make...you can make it ahead of time....it holds well in the refrigerator, and it has very few ingredients...It says special, very, very special....

Ingredients
•1 quart heavy cream
•1 tsp vanilla
•1/2 cup sugar
•6 large egg yolks
•2 quarts hot water

Directions

Preheat the oven to 325 degrees F.
Place the cream, and vanilla  into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes.

In a medium bowl, whisk together 1/2 cup sugar and the egg yolks until well blended and it just starts to lighten in color. Add the cream a little at a time, stirring continually. Pour the liquid into 6 (7 to 8-ounce) ramekins. Place the ramekins into a large cake pan or roasting pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake just until the creme brulee is set, but still trembling in the center, approximately 40 to 45 minutes. Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days.

Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

4 ingredients....

put cream and vanilla in pan....boil on medium heat....

until really boiling...almost over the top of the pan....hurry and pull off...Whew!

put a lid on and set the timer for 15 minutes....

then mix your egg yolks and the sugar....

beat until light yellow and fluffy...slowly add the hot milk....

and beat....while pouring in the hot milk....


pour into little ramekins that you have in a baking dish.....they don't have to match and they can be different sizes...

set in the oven and pour boiling water in the pan deep enough to reach halfway up the sides of the dishes...

bake until set and jiggly still in the middle....remove and cool slightly and refrigerate until time to serve...

you can buy the flame thrower at kitchen shops...it is the funnest tool in the kitchen...everyone will come running when you start using flames...when you are burning the sugar it smells like toasted marshmallows.

add a fine sprinkling of sugar, about a teaspoon  and shake around....

light your torch and hold about 6 inches away from the sugar top...keep the torch moving back and forth or in circular motion so that you are toasting evenly.....

you want the topping to slightly bubble...wait 5 minutes...it will turn to a sugary glass on top....



and serve....this is the best and easiest dessert ever....bon appetite!
