Dream a little Dream....

A person can dream.....I dream of many things, but travel is one of my favorite dreams...My biggest dream is to go to San Miguel de Allende in Mexico, I have been wanting to go there for a very long time, the town was founded in 1542....there are many historic facts about the town, and is known now for the arts, they have many schools there teaching painting, drawing, pottery, textiles and cooking...

The thing most people notice first in San Miguel is The Parroquia (right), the pseudogothic church in the heart of San Miguel de Allende.

Legend has it that the architect of the facade (added in 1888) of the church had never seen a gothic church and had to take his ideas from picture postcards of the gothic cathedrals of Europe. Apparently not much of a draftsman, he drew pictures of his concept in the dirt in front of the church to show his workmen what he envisioned.

Doesn't is look just grand? the church is pink...they used pink stone..
imagine a PINK church.....

I can neither afford to go there for a visit and afford to retire there...but...if ever I turn up missing, and you need to find me...I would look there first....


....so, for now, I travel via the internet....I look at all the sights and surrounding area...when doing this research I found that by going to Craigslist, I could change to Mexico, then to San Miguel , and find housing, apartments, a maid, a car, a school, even some chickens...

this is a better place....has 8 bedrooms and bathrooms...plenty of room for friends and family to come and vacation....

I encourage you all to do the same, It is very fun to go to Italy or France too...the prices are not in US currency...so you are not alarmed with the prices, who knows it could all be in your price range...

Carmel Corn...

I got this recipe from my friend Topie....it is the best Carmel corn you can make or buy for that matter. It is chewy,and soft but not hard or too sticky...I make it every year for my brother in law, Rick and this year I didn't, I know, but I was busy and so was he...Out of shame and embarrassment, he will be getting it for Valentines Day...I can then again, hold my head up high and put my shoulders back...and you dear friends, are getting to have this very dear and highly desirable recipe.......
Carmel Corn

2 cups light brown sugar
1/2 cup light corn syrup
1/2 pound margarine or butter
1/4 tsp cream of tarter
1 tsp salt
1 tsp baking soda
6 quarts popped orville popcorn

In a 2 quart saucepan combine brown sugar, corn syrup, butter, ream of tarter and salt. Bring to a boil and stirring over medium hear. Stir constantly, boil rapidly to hard ball stage (260 degree)

remove from heat, stir in baking soda...quickly but thoroughly pour at once over popcorn in large tin or roasting pan...stir gently until all kernels are coated. Bake at 200 degrees for 1 hour stirring 2-3 times during baking. turn out at once on wax paper. Spread apart and allow to cool completely. Break apart pieces to desired size. Store in lightly covered container....

very important here to use Orville Redenbacher popcorn...it pops with no seeds left, (you don't want those teeth breaking seeds in your Carmel corn) also 6 quarts is a gallon and a half....just eyeball it....and a roaster is almost a necessity for this...what do people do without a large roasting pan?

here are your ingredients, not to many, I used 'I can't believe it's not butter' and it worked fine, but real butter is wonderful, also I only buy dark brown sugar and really it is better....but light is fine...

all the ingredients in the pan....and stir over medium heat...with a pink spatula, but change to a wooden spoon...

this goes rather quickly so be sure to have everything ready...maybe 5 minutes and it is hard ball stage...buy a candy thermometer, you will have it your whole life and you will be happy....

pour the Carmel over the corn and stir quickly to coat...you will be glad you used the roaster and have all the extra stirring room...try not to get the hot Carmel on your finger, ouch!

spread evenly in the pan...

put in the oven....and set the timer...stir ever 20 minutes...

after an hour in the oven is over, spread it out on the counter that has been cover with waxed paper or parchment paper...

This is so good...and anytime is Carmel corn time! Make some for the big game, or to take on a trip, or the movies, or for a special gift!  Enjoy!

Quick Vietnamese Chicken Pho....

Pho soup is a Vietnamese or Cambodian soup....it is a staple in their country....many of the rich wonderful Pho soups are beef pho.(pronounced fuh) this is a chicken pho and so rich and flavorful and good....this one is a Quick version and takes only a short time to put together... now you start with a trip to the local Asian store...honestly I  try to come up with any excuse to go there. It is so much like going to another country..I love looking at all the unfamiliar fruit and vegetables and fish and sauces and candy.........
this picture was last summer, I took the grandkids on a treasure hunt to get candy at different ethnic stores...so of course we went to my favorite Asian store....Hong Kong market...today I found some great finds....I will show you.......
these crackers are so cool...the ones with sugar taste kinda like pie crust with sugar on them and the others are a cream soda cracker...
this is powder coconut cream, you can use it in baking and in sauces....
coconut milk for baking.............

these are fresh rice noodles for tonight's dinner.....just 2-3 seconds in boiling water....
and bean sprouts...see it says best quality.....

Quick Vietnamese Chicken Pho

1 lb dried rice noodles
SOUP BASE

2 tablespoons whole coriander seeds
4 whole cloves
2 whole star anise
2 quarts chicken stock (store bought or homemade)
1 whole chicken breast
1/2 onion
1 3-inch chunk of ginger, sliced and smashed with side of knife
1-2 tablespoons sugar
1-2 tablespoons fish sauce

ACCOMPANIMENTS

2 cups bean sprouts, washed and tails pinched off
fresh cilantro tops
1/2 cup shaved red onions
1/2 lime, cut into wedges
sriracha chili sauce
hoisin sauce
sliced fresh chili peppers

Directions
To make the broth, heat a frying pan over medium heat. Add the coriander seeds, cloves, and star anise and toast until fragrant, about 3-4 minutes. Immediately remove from pan to avoid burning.

In a large pot, add spices, chicken stock, chicken breast, onion, ginger, sugar, and fish sauce. Bring to a boil. Reduce heat to medium-low and let simmer for 20 minutes, skimming the surface frequently. Use tongs to remove the chicken breasts and shred the meat, discarding the bone (if you used a bone-in breast).
Taste broth and add more fish sauce or sugar if necessary. Strain the broth and discard solids.

Prepare the noodles as per directions on the package.

Ladle the broth into bowls. Divide the shredding chicken breast and noodles evenly into each bowl. Top with bean sprouts, cilantro, red onion, and other accompaniments as desired and enjoy.


Now that you know the recipe I will tell you what I did....I had a rich chicken stock in the freezer....
I added the seasoning...I bought the star Anise at the Asian store for a huge bag for .79.
you must use fish sauce...it is what makes it authentic...don't read the ingredients, just use it...
let the stock simmer slowly for about a half hour....you can cook some chicken breasts in the broth if you don't have chicken already.....

these are the 'toppings'...cilantro, lime, onion and crunchy fresh bean sprouts....

you put the noodles in the bowl...ladle the broth on....and put on top the cooked chicken, onion, sprouts and cilantro....then top it off with a squeeze of lime....
this so so good and flavorful, not to mention low fat and so healthy....it feels clean

This taste exactly like going to a Pho Soup shop.....and so easy!!!!

the Help

I just finished reading this book the other day...great book, very thought provoking....this was the first time I wished I belonged t a book club, it would have been great to have some one to discuss it with...here is a short review....

Through the strong voices of two black maids and one white woman, readers get a glimpse of the cruel treatment of African Americans in Jackson, Mississippi during the Civil Rights movement. Aibileen ...
More, who lost her only son in an accident, is a devoted maid who fiercely loves the children for which she cares and often gives them more attention and guidance than their own parents. Minny is known for her terrific cooking, but also for her tendency to freely speak her mind to the white people for whom she works. Skeeter, fresh from college and writing a housekeeping column for the local paper, could not be more different than her white friends. Vying to be published by Harper Collins and inspired by the maid who tended to her throughout her childhood, Skeeter decides to write a book about the lives and treatment of African American maids; a truly dangerous mission in an area strewn with the Ku Klux Klan and an opposition to the Civil Rights movement. A first novel for this author, this beautiful story gives a raw and personal look at the treatment of southern blacks in the early sixties.

I did just learn something the whole wide world probably knows...you can go to google, click on books and pick from a bazillion books and read them right here on your computer for free...you can enlarge it to your screen and there you are laying in bed with your lighted laptop on your lap reading....and yes 'the Help' is on here.....Cool huh?

Cowboy Poet Marie Smith....


This picture was taken on Marie's 80th birthday.  We went to Somer's to celebrate with her.
The lady on the right is Marie's sister, she came all the way from Australia to surprise her.

Marie's home where she and Cecil spent many happy years raising their children near the shore of Flathead Lake.

I got an e-mail the other day, that one of our favorite cowboy poets of all time had passed away.....Marie W. Smith lived in Somers Montana,  located up by Flathead Lake near Glacier National Park....right at the foot of the beautiful Mission Mountains...Marie must have been in her late eighty's if not early ninety's....She raised 11 children and was married to cowboy artist Cecil Smith...He died in 1984....

I met Marie in the early 90's at a cowboy poetry gathering in Salmon Idaho....She would drive all the way there by herself in one of those big old 'boat of a car' kind of cars...She was a large frame woman with beautiful red hair, that she wore up in a soft loose "Gibson"style....her eyes sparkled and when she talked to you she looked right in your eyes....made you feel really special....we befriended her....what I mean is our Thunder Mountain Gang, hung on her every word....she was a rock star and we her groupies...She was very humble and very spiritual...Her voice! She talked with an Australian accent, having been born and raised in Australia...She started performing her poetry in 1986 and had been given many awards for her outstanding work...also she has written numerous books and short stories....Everyone has a favorite poem of hers, I will share a couple. Marie read her poems with much feeling, this one almost a hushed whisper..... this first being my personal favorite called

A Star's Legacy                        

Grama left three years ago,
she didn't want to go.
"Your Grampa, hes been awaiting"
she said I have been kinda slow

"To join him, hate to leave you girls,"
and she smiled up through her tears.
She'd requested her granddaughters visit,
we'd not been together for years.

Now we gathered, hating the reason
wished we'd just come to say hello.
Outside a fall wind rustled leaves
when her voice rose, whispering low.

My mothers ring for Jenny,
My own is for Estelle.
Wedding dress and rings for Sissie,
I hope they fit her well.

For Mary, the silver teaspoons,
the fire opals there for Sade,
the golden chains for Bethie
and Tammy gets the Jade.

"For Annie theres my mothers pin,
and that's all the jewels that be."
I was left out and I felt the loss
when she turned and smiled at me.

Her breath it came so slowly,
"Honey this here old quilts for you."
I reached across and touched her cheek
as she stroked the pattern blue.

In years past I'd loved those little stars
That shed stitched and appliqued
"Remember to reach for yours" she'd said
"Then your life will be well made."

Now she whispered "But most of all
It's what's inside," and I learned
why the batting wasn't fluffy
like others that were fair prize earned.

"Back in years before you were born
Oh it must have been sixty two
Your grampa bought me a blanket
in my favorite shades of blue.

"It really meant a lot to me,
see, blues weren't his favorite shade,
But he slept beneath that blanker with me
for more that two decades.

"Year after year we used it,
despite its thinning weave
we just added another one
when its warming started to leave.

"Its binding frayed and fell apart
the year god called him home
I slept alone beneath it then
it cheered my spirit warmed my bones.

"One day in a upper corner
I noticed a tiny hole
and wondered how to preserve the spread
before it got too old.

"So twenty five years after he bought it
I used it to stuff the quilt.
If you' re careful dear it will last
like your homes that newly built."

After she left I took it,
to clean and preserve it I must
and store it these years on the closet shelf
away from the light and dust.

But did Grama mean me to store it?
I thought one day this past fall
and the answer strong it came to me
as I hurried down the hall.

I opened up the closet doors
what make those blue stars glow?
Was it the love seeping through the blanket
from those years so long ago.

Oh, I did have a jewel and it spoke to me
of love and devotion and care,
and that night as we snuggled beneath it
I could feel their love gather there.
This is a picture of Marie with a Birthday Quilt given to her by cousin Keven.  He also performed some of her poetry at the party.  She was so pleased.

Skipping Rocks

I walked today across the stony beach,
picked a rounded purple skipper, flat
from constant waters long caressed.

Were you there again? Did you sit
your pony at lake edge, beckon me as I pressed
the stone, then follows its erratic flight,
five giant skips? The best!

Did you smile? My heart played skipping rocks.
You taught me well, stressed
all the rules. I watched for you at dock's
end. Ah, love if you could teach
me yet how to still the flock of

longings that rise like gulls, reach
out, ride to me across the stony beach.

Dahlias

I was reading the pioneer woman yesterday and she had the most beautiful pictures of dahlias on
her site and a link where to buy them...then remembered we have one of the top producer's of Dahlias
right down the road from me...you can also order the Dahlias on line....just go to
http://www.connells-dahlias.com/ and click 'view pictures' and you can see pictures of the dahlias before you order them....they are perfect for the Northwest and like full sun....they are just as beautiful as any flower out there...

In late August you can visit the Farm and buy and or cut your own Dahlias, they have 5 acres to choose from...you can also at that time order (in person) your own Dahlias for your garden...


Then in September you can go and see their display at the Puyallup Fair....


this is such a happy, beautiful color....an apricot orangey...stop rubbing your eyes, the pictures really ARE blurry..

can imagine anything so intricate?

and this little beauty, this is one of their new ones...
they also have some great helpful hints for growing Dahlias on their site.....and how to cut down on the amount of earwigs....(it is a fact, that if you have never seen an earwig in your garden it you plant Dahlia's they will show up) and off of one tuber you get a great big plant with many, many flowers. Enough to cut and share with your family and friends!

Grandparents Day....

A couple weeks ago I got the invitation....Misty says "Gram, grandparents day is on Friday the 5th of February" and I put it on my calender and didn't think about it until yesterday....I have been once before, the year before last...last year it was cancelled because of snow.....I knew a little about what was expected...bring a cool lunch....You can buy the school lunch, but since Misty NEVER does buy lunch at school, I knew that was out. Now Misty is not real picky but....she doesn't like certain things, or should I say combination of things...Like she likes lettuce, but not on her sandwiches....I heard some grandparents go to Burger King or McDonalds and bring it into the school and have that....so here was the dilemma....was it COOL to buy lunch, go to fast food, or bring lunch? I wanted to be the COOL grandparent... I asked Misty and she said she didn't care...that was no help....so making her lunch was being my authentic self...the Gram she was stuck with...so I made lunch...

chicken sandwich with mayonnaise only.....no funny stuff....


pringles ( I did go with the reduced fat) you got to have a little crunch with your sandwich...


well here is the rest of the lunch, some little carrots and a cute frosted cookie...and clementine carbonated juice...doesn't that sound grand? Clementine pop....



So here is the follow-up....Misty was very gracious and loved her lunch...Yeah! But I couldn't help but notice NO ONE ELSE brought their grandchild's lunch from home....There was Subway, Quiznos, McDonalds, Burger King, Pizza Hut, and believe it or not Olive Garden......come on, it is school lunch....really Olive Garden...so the moral of the story? I think is to bring 'artfully beautiful cupcakes' for the whole class and the teacher, the most beautiful cupcakes that the world has ever seen, and a personal sized pizza for your grandchild and pop in a plastic cup with a straw...and you claim to not be hungry and you just adoringly watch them eat.....
