Peanut Butter Cookies



This recipe is adapted from the Grand Central Baking Cookbook...Grand Central is the bakery in Pioneer Square in Seattle...the one you wait in line at...this is a traditional Peanut Butter cookie..This recipe is the one that you can roll the dough in balls and bake and when then are just out of the oven you can put the hersheys kiss right in the middle....also would be very festive to dip half the cookie in melted chocolate, then dry on racks...I made these cookies for my grandchildren. I have learned that they don't like any 'funny stuff' when it comes to food....
This delicious recipe makes cookies that are crisp around the edges, while still soft on the inside...

Peanut Butter Cookies

3 cups of flour
2 tsp soda
1 tsp salt
1 cup of peanut butter
1 cup of softened butter
1 cup of white sugar
1 cup of brown sugar
2 eggs at room temperature
2 tsp of vanilla

mix the flour, soda and salt together and set aside...mix the butter, peanut butter, and both sugars together in the mixer at medium speed for approx. 5 minutes, until very light and fluffy..add the eggs and beat again for 1 minute..add the flour mixture by the spoonful with the mixer on low speed, mix just until blended....drop the cookies by the teaspoonful on cookie sheet and sprinkle with sugar....make a criss cross on the top of the cookie using a fork...sprinkle with large grain sugar for an extra good cookie...bake at 350 for 10-12 minutes..makes about 5 dozen..

cream butter, peanut butter, brown sugar and white sugar


beat until very fluffy...then add eggs and vanilla...beat again
and add the flour mixture...


drop by teaspoons and...


dipping your fork in sugar....


press down on dough making a ...


criss cross on top...


sprinkle course ground sugar on top and ...


 bake at 350 for 10-12 minutes


and then ENJOY!
