Italian Meatballs...

meatballs...
Have you ever noticed how good meatballs are at Italian restaurants? They are soft, tender,  meaty, and good. I did a little research a found I was putting in way to many ingredients and was making them like I do meatloaf, and found that was wrong...although good, just not the best....I started making them this way a few years back...they are so easy, and it is great to make extra to put in the freezer and have for an easy dinner later....

Italians Meatballs...
1/2 pound lean ground beef
1/2 pound ground veal
1/2 pound ground pork
3 slices of bread, crumbled
3/4 cup milk
2 eggs, beaten
1 small shallot, minced
1 large clove of garlic
1/2 cup of chopped parsley
1 cup of shredded Parmesan
salt and pepper
flour

mix the crumbled bread and the milk together in a bowl and set aside, for a few minutes until all the milk is soaked up....put the meat in a large mixing bowl and add the bread crumbs, eggs, onion, garlic, parsley, Parmesan and add a tsp of salt and tsp of pepper....mix thoroughly with your hands....shape into golf ball size balls and roll in flour....place on a baking sheet, and salt and pepper again... bake at 400 degrees for 25 minutes, turning once after 15 minutes....

here we have all the ingredients...pretend the English muffins are bread slices....(I didn't have any bread, and I might add that the English muffins worked great)...and I used half and half for milk....

crumble your bread and add the milk...this is a step that they use in Italy...to wet the bread crumbs before adding them to the meat...it make the softest, nicest meatballs....

add all the ingredients to the bowl, then take off your rings....

and mix, mix, mix........

make into balls, about the size of golf balls and roll in flour...salt and pepper again if desired and....
bake at 400 degrees for about 25 minutes, or until internal temperature is at least 165....

done!

Serve them any way you like...they are great plain, with a sauce or in a sandwich....I served them with a plain tomato sauce and wide noodles...you will love them, any way you make them!!!
