Grilled Mexican Street Corn...Elote...

Mexican Street Corn...MmmmMmmm Good! They sell this corn all over the streets of Mexico, or so I have heard...I have never been there, but this is quickly becoming a popular food at all fairs and festivals..so when we were planning the Great American Picnic I was sure this was it! The winner! It is so good...the roasting brings the sugar to the surface of the corn...it is sweet and so flavorful... 

I set up my booth, at the picnic site, decorated it with every Mexican item I had...I had a hundred ears of corn and I was ready to go!

This is my helper daughter Anne...she is melting the butter in a tall tin measuring pan....we will be dipping the grilled corn in this and then put on all the other toppings....

we are so ready to go! This is myself, granddaughter Brena and one of my daughters friends Greg....this is about when all heck broke loose and we started seriously serving corn and all hope of taking pictures and blogging this corn went right out the window...so I re-enacted it at home....gladly I might say...

heat your grill to 400 degree's.....

here is what you do with your corn....take off the outer leaves, pull the inner leaves back and take off the silk...then put the inner leaves back up and you are ready to go! Place on the grill and then close the lid...

cook for approximately 15 minutes...turning every 5 minutes...they might start on fire...if so just close the lid and the fire will go out...

these are about done....

when you have decided they are done...put on some gloves or grab a towel and peel the leaves back, this will become your handle....there will be some brown grill marks on your corn, that is perfect...

in the meantime you have gotten your toppings ready....butter, mayonnaise, lime and mexican cotija cheese...

and a sprinkle of chili powder....

first the butter, then the mayonnaise then the sprinkle of cheese, then squeeze the lime all over the corn and finish with a sprinkle of the chili powder....I promise once you eat Mexican Street Corn you will never want to go back to regular corn.....(and no I didn't win)....
