Flourless Oatmeal peanut butter cookies...


These are such great cookies...one of my favorite part of the cookies is that there is no flour or weird substitute....I imagine these would be great with raisins, and chocolate chips or M&M's...like Montana Monster cookies...it was hard for me to imagine that these would hold together and bake nicely without the flour to bind them...but they do...they are almost like making your own nutritional cookie...they are crisp on the outside and soft inside...very peanutbutterey....the nuts are great! give them a try, you wont be sorry!



Oatmeal Peanut butter Cookies...
1/4 cup butter
1 1/4 tsp baking soda
3/4 cup sugar
3 cups rolled oats
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 cup peanut butter
1/2 cup chopped pecans or walnuts (optional)

Preheat oven to 350 degrees.  Combine sugar, brown sugar, and butter in a large bowl.  Beat until creamy.  Add eggs, vanilla, and baking soda: mix well.  Add peanut butter and mix.  Stir in the oats, chocolate chips, and nuts.  Place dough by heaping teaspoons onto a lightly greased cookie sheet, about 2 inches apart.  Bake 10-12 minutes or until light gold on the edges.

  1. Oh my goodness, these are the best cookies ever! We have recently gone wheat-free and are always looking for flourless recipes. My 21 year old son (who has taste-tested a lot of cookies of the years) said it is favourite cookie ever!! I think the pecan pieces make the difference. We put in 1/2 cup chocolate chips. Thanks for your blog - very fun!
