Bacon Relish....

Yep, just what the title says, Bacon Relish...some call it bacon jam...there is a place here in the Seattle area that sells this...they have air stream trailers and make gourmet hamburgers and sell them with the bacon jam....but if you call it bacon relish more people (like my daughter) will be open to trying it...if you have a harder time than that selling it, you can call it bacon spread, it is slightly sweet and very bacony....

bacon relish

a pound of bacon, I used bacon ends and pieces...1/2 cup of maple syrup, one large onion, 1/2 cup brown sugar, 1/4 cup apple cider vinegar, 3 cloves of garlic minced, 3/4 cup of coffee and 3 bay leaves and salt and pepper to taste...

fry the bacon until very crisp....drain...

in a crock pot add the onion, vinegar, syrup, bay leaves, coffee, and salt and pepper, garlic, and sugar...  

add the bacon and mix altogether.....cook on high in the crock pot for 4 hours....when I made this at work I omitted some of the coffee for a half cup of Jack Daniels...it also was very good....

when it is finished....put in the food processor and whirl till a course relish...

serve warm on any thing you will like!

I had mine with a Turkey and Havarti sandwich...but the best would be a great big juicy burger!!! This is a guaranteed good recipe, you will want to just eat it from a spoon, seriously!!

    Do you whirl up the bay leaves with everything else? Normally those are taken out.

  4. I put this on a super juicy slider on with a little muenster cheese and a slice of tomato, all on a king's hawaiian butter roll. It was awesome!
