White Chocolate and Sea Salt Popcorn

We are in full swing Christmas season now. Houses have the lights on, trees are being put up, presents are being wrapped and parents are singing "Santa Claus is coming to town" to their children. Here is a treat that is quick to make and will add something special to your holiday party.

White Chocolate and Sea Salt Popcorn

1 cup popcorn kernels
1 tablespoons vegetable oil
11 ounce bag of white chocolate chips-(choc chips will work the same way)
2 tablespoons butter
2 tablespoons milk

Pop the corn in the oil..In a medium saucepan pour the tablespoon of oil and heat over medium heat. When oil is hot, throw in popcorn. Make sure all of the kernels are touching the bottom of the pan. Cover the pan and wait until you hear kernels start to pop. Once they start, grab the pan with one hand and grab an oven mitt or towel and hold down the lid. Pick up the pan and start to shake until all for a few moments. Return pan to the stove and repeat a few times. It takes some coordination, but it’s way easy and this way you won’t have any unpopped kernels and the popcorn won’t be burnt.

put the popcorn in your largest bowl...then visualize yourself stirring in the chocolate...then go get the largest container you own in my case it is the canner...

ok better now we are ready to go again.... In a double boiler, or just a glass mixing bowl over boiling water, throw in the butter, chocolate chips and splash of milk or cream. Stir until melted.

Now as this is slowly melting it goes through a process of looking clumpy, don't worry just keep stirring, it will all come together soon...when the chips are all melted and nice and creamy..

your ready to pour over your popcorn...

slowly pour over the popcorn and stir, all at the same time...quite a trick...
when very well mixed prepare a bread board or a couple of cookie sheets..

and spread the popcorn out and sprinkle with sea salt...

use any sea salt...this one is pink...the salt is delicious with the chocolate...cool and let set for 2-4 hours...

Put out in bowls and watch it disappear!

or bag it up and tie with pretty ribbon and give as gifts....

Cheers to Happy  !!
