Penn Cove Mussels...

Mussels are one of those meals that you don't encourage anyone else to eat...if the person you are with doesn't like them, then there is more for you! This is one of those super easy and very versatile things to make...you can simply steam them, or season them first...they cook very fast....maybe 3 minutes....you can dip them in butter as you would steamer clams or just eat them like they are..they are tender and not the least bit chewy...the broth is great with sourdough bread dipped in...hmmmm!

I bought, 1 pound of mussels...that is plenty for one person for an entree or for a couple of people for an appetizer....you soak your mussels in fresh clean water for 20 minutes....

 clean your mussels, scrub them up with a little brush...some have these little beards...just take a knife and pull the beards off....take out any that are not closed tightly and that the shells are broken...and discard....

you just need these few ingredients...butter, lemon juice, garlic, salt and pepper and white wine or chicken stock....

unless you have a stock of white wine, it is great to buy these little bottles of white and red wine, that they sell at the grocery store in the 4 pack...they are handy to have on hand for cooking....

melt the butter over medium heat and add the chopped garlic.....

drain your mussels and get ready....

add handfuls of herbs of your choice....I added parsley, tarragon, thyme and rosemary...you could add just the parsley and some celery tops if you have them...it is just a mild seasoning...then salt and pepper...

add 1 cup of white wine or broth...when it is boiling, add the mussels...when it comes to a boil, cover for approximately 3 minutes, or just until the mussels open...

take off the heat and enjoy! If there are any mussels that have not opened during the cooking process, discard...You can share with others...(if you like)...or you can start with tasting one and before you know it you have eaten them all! oops!!!
