Roasted Carrots...

This week it is time to start cleaning up the yard and get it ready for winter...It is hard to believe that the time has come to start thinking about getting firewood and putting on the flannel sheets...I am not ready for short days and long nights...I have been looking at quilt books and deciding what Christmas projects I can start, it will be here before we know it, but for now I will enjoy the beautiful fall......

...I love roasted vegetables..I am on a roasting kick right now....I love to roast fresh green beans, asparagus, squash and any root vegetables...beets, potatoes, parsnips and carrots...the roasting brings out a sweetness, a great flavor and freshness...these are roasted carrots...the procedure is the same for any roasted vegetables you would like to do....

pick or buy your vegetable...

scrub then like crazy, no need to peel...

put in a roasting pan...I lined mine with foil...clean-up is then a snap!

drizzle with olive oil, and sprinkle with kosher salt and fresh ground pepper...roast in a 425 oven for approximately 25 minutes, or until soft....

and enjoy!!! so good!!!
