Baked Potato Soup...

Baked Potato Soup

12 slices of bacon*
2/3 cup butter
2/3 cup all purpose flour
7 cups of milk
4 large baked potatoes, peeled and cubed (I microwave mine and then just scrape em out.)
4 green onions, chopped* (or I use about ½ cup of sweet onions)
1 ¼ cups shredded cheddar cheese*
1 cup sour cream
1 tsp salt
1 tsp pepper

Cook bacon, drain and set aside. In a stock pot, melt butter over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently. Reduce heat, simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

  1. Yummy! I was at Annie's house just today and was not offered any of this; must not have been any leftovers!
