Buttermilk Pancakes.....

Once you make these you won't want any other pancakes...It spoils you for all other pancakes....yes Krusteaz does make a good mix...Bisquick ones are good also...but making the perfect light pancake does require taking 2 minutes and mixing up a few ingredients and there you are.....morning bliss...


Pancakes
(makes about 16...5 inch pancakes)

2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoons soda
1/2 teaspoons salt
1 large egg
3 tablespoons butter melted
2 cups buttermilk

Whisk together all the dry ingredients....Melt the butter...whisk the egg....mix the egg, buttermilk and butter together...make a well in the middle of the dry ingredients and pour in the wet ingredients...stir all together just until blended...will still have small lumps...heat a skillet a little under medium heat, with a small amount of oil, or spray the pan with cooking spray and be sure to use a non-stick skillet.....cook just until large bubbles form on the surface and flip...the pancakes will rise...cook on the opposite side....enjoy...

whisk all dry ingredients

put all wet ingredients together...

pour wet into dry....

stir just until blended, don't over stir......

cook in non-stick skillet...always throw the first pancake away...it is always funky weird...

nice big bubbles, losing its shine around the edges....ready to flip....

and there it is! and yes I do know they make a bigger non-stick pan..one that you could make three at a time...but I don't own one....I hope you do....and DO NOT pat the pancakes down with your spatula while they are rising....and if you do I hope my mother never finds out....this is the one thing that turns her inside out...you will see her angry bad side.....just sayin' from experience...

light, fluffy, soft....tastes like heaven on a plate!
