Three Chicken Wings.....

 Here is the second installment of Trucker Joe......3 different variations for seasoned Chicken Wings....Bring on the party!!!!!!!


Three Chicken Wings.....

Start with 2 lbs of large chicken wings and trim off any fat, remove
the wing tips and discard them. Soak the wing pieces in buttermilk for
about 5 hours and then let them drip for 10 minutes. Deep fry batches
of the wings in 350 deg. oil for about 6 minutes, the wings should be
 crisp on the outside and nearly done in the center. Toss batches of
wings in the sauces for a few minutes and then lay them out separated
on any oven safe cooking surface. I used a pizza pan covered with
foil. I let mine stand for a few minutes and then baked them at 400
deg. for 5 minutes.

caution: As always be very careful of flare up and splashing as you add the
chicken to the hot oil, keep and eye on the temperature of your oil
and only add new batches after oil heats back up.

just out of the oil and ready to be sauced!


Spicy Wing Sauce:


3/4 stick of butter
Tabasco Sauce (to taste)
1tsp. of onion powder
1tsp. of garlic powder
1tsp. of black pepper
Salt as you feel necessary

(hint: the spicy side of the sauce will become milder after cooking)

Melt the butter in a sauce pan and wait for the water to evaporate.
Add the rest of the ingredients and stir well.
Check for the "spicy" and add the Tabasco as you feel the need. You
could even add red pepper to get more heat if you want.
After the sauce comes together let it cool and toss with with wings in
a covered bowl. Let them rest a few minutes and bake for 5 minutes at
400 deg.

Asian Wing Sauce:


1/4 stick of butter
1 1/2 tbs. of Hoisin Sauce
1 tsp. of ground ginger
1 tsp. of onion powder
1 tsp. of garlic powder
splash of Worcestershire sauce
splash of sesame Oil
2 tbs. stir fry sauce
black pepper and salt as you like

Melt the butter and let the water evaporate as before and bring the
ingredients together over heat and stir well. Let the sauce cool and
toss with the wings as before but let this batch rest for a little
while longer (10 min. or so). Bake in the same way as before at 5 min.
at 400 deg. and let the rest before eating.

Basic BBQ wings:

1 cup of your favorite BBQ sauce
1 tsp. garlic power and 1 tsp. onion powder
*depending on your sauce you can add brown sugar
2 tsp of butter
a dash of salt, red pepper, white pepper, and black pepper, all of
these to taste.
Repeat all to the steps from the other wings and eat right away for
saucy goodness.
