Wedge Salad...and Ranch Dressing...

                        
Don't you just love a wedge salad? There is something so simple about it....it doesn't try to be something else, something fancy, or something foreign....just a great salad! It is perfect with steak....and here is a plus, just leave off the blue cheese and kids love it...really!  You must start with a great homemade ranch dressing, ok.... not really but why not?

Ranch Dressing

1/2 cup buttermilk
1/2 cup of mayonnaise
6 tablespoons of sour cream
1 tablespoon of minced shallot or red onion
1 tablespoon of minced parsley
1 clove of garlic minced
1 teaspoon of fresh lemon juice
pinch of sugar
1/2 teaspoon of salt
1/2 teaspoon of pepper

Whisk all the ingredients together in a bowl until smooth. the dressing, covered can be refrigerated for up to 4 days.....
whisking the buttermilk, mayo and sour cream together
mincing the shallot and garlic......be careful of the sharp knife...ouch...
mix all up together and......
store in the fridge......
Here is the wedge salad.....a wedge of iceberg lettuce, as large as you like.....spoon over the ranch dressing, across the center....sprinkle on seeded, small chopped tomatoes....green onion...chopped crisp cooked bacon....and blue cheese.....and that is it...so simple and so good!!!!!!
