Quesadilla...

Happy Cinco de Mayo....I cooked Quesadilla for dinner....now cooking Quesadilla is a procedure and not a real recipe...it is a good way to use leftovers...and you can get everything prepped and everyone can put their own together....

I used caramelized onions, crisp bacon, left over thin sliced steak, sauteed mushrooms, guacamole, shredded cheese, diced tomatoes and cilantro....the guacamole is just a clove of garlic, a couple of green onions, a handful of cilantro, a half of a juiced lime, and an avocado and a shake of salt and pepper and blend in a blender, just pulsed a little bit....

set the burner at just a medium low heat.....
put a tortilla down and your shredded cheese....
add some of your other item, the ones you like, make it like you want to eat it! Then put on another tortilla and flip over.....

if you ever see one of these buy it....I bought it about 25 years ago at a Scandinavian festival...I think it is for turning lefse....I have always used it for flipping tortillas...works great!
after it is finished take it and put on a cutting board and cut with a pizza cutter.....
and here it is!!!! Fabulous!!!! Happy Cinco de Mayo!!!!
