Strawberry-Rhubarb Freezer Jam...

Strawberry-rhubarb Freezer Jam
4 cups sugar
4 cups of diced rhubarb
2 tsp lemon juice
1 cup of fresh sliced strawberries
1 (3oz) pkg of strawberry gelatin
combine rhubarb, sugar, strawberries and lemon juice in a saucepan: stir to blend...Place over low hear, stir until juice forms. Turn to a medium heat and bring to boil stirring occasionally. When mixture is at a full boil, set the timer for 15 minutes...after 15 minutes take off the heat and add gelatin and stir...cool partially and pour into small containers and store in the freezer. Refrigerate after opening.
                                   
cut your rhubarb into bite size slices, much like sliced celery...

place all in the saucepan....
heat over low heat until much juice appears....raise to medium heat...
When it starts to boil set timer for 15 minutes....
when it is done, add the gelatin...be very careful it spits at this point, and can hit you in the face, just missing your eye and hitting your cheek......and you yell 'ouch' and you say it in a way that you sound just like your mother.....the sound you never want to hear come from your mother...
place in freezer containers and label....put some in jars for
the fridge so you can eat some right now.....

So good, and fresh and it will say spring right in the middle of next winter!
