Nacho Chicken Pitas...

This is my niece Erica York, and her daughter Ashlynn...she is an awesome cook and busy young mother who lives in Lubbock Texas....not by choice, but by chance, Her husband Steven is stationed there in the Army...she is making the best of the situation and has kept herself busy! She is a fellow foodie...she loves to cook! She cooks up a storm!
Here is Ericas Recipe for Nacho Chicken Pita's...take it away Erica!!!!!



Nacho Chicken Pitas-

4 Servings:
1 egg
1 cup crushed nacho tortilla chips 
1 pound boneless skinless chicken breasts cut into 1 inch strips
Mayonnaise
4 pita breads, halved
Lettuce leaves
Tomato, sliced
Shredded mozzarella cheese

In a shallow bowl, beat the egg.Place the crushed chips in another shallow bowl. Dip chicken in egg, then coat with chips. Place in a single layer in a greased baking dish. Bake at 400* for 20- 25 minutes or until juices run clear.
Spread mayonnaise inside pita halves ( then I put them in the microwave for about 40 seconds wrapped in a damp paper towel to warm them without drying them out ), line with lettuce. Fill with the chicken and tomato; sprinkle with cheese. ( then I put them back in the microwave for a few seconds to melt the cheese)

Steven said they would have been better with a "zesty-er" sauce. I thought they were good just like this though : )

  1. This looks delicious! You could even spread hummus instead of mayo inside the pita halves, and it would give them an extra "zest" Steven might like :) I will definitely try these soon.
