Green bean and Chicken stir fry.....

"Lets go out for Chinese food.".........."I have an idea........we will make some at home'. Well it sorta went like this....Because I work in restaurants, sometimes when I am off work, I would rather not eat than go to a restaurant...so I can make dinner real quick with a threat like, "let's go out for dinner"!



Start the rice, cooking in the rice cooker and get out whatever you can find in the kitchen., seriously anything goes in...


Green Beans
Soy Sauce
oyster sauce
teriyaki sauce
sesame oil
Chicken breast (cut into bit size pieces)
Garlic
Onions
Pineapple
mandarin oranges
water chestnuts
chicken stock
and most important, fresh chopped ginger
(but any combination of vegetables would be great)




Oh, and a can of water chestnuts


Chop the ginger



Marinate the chicken in the teriyaki sauce...



Brown the chicken pieces in a very hot pan to sear in the flavor



Cook until browned on all sides



The rice smells good, it must be done



chicken looks done, but wait until it is really browned on all sides and put in a bowl, set aside and wash out the pan and then add some olive oil and..



Now add all the vegetables and cook like a stir fry, in a medium high heat heavy skillet...



add the water chestnuts at the end, place cooked vegetables in a bowl and then make the sauce...



Wow ignore my grandmothers hands in the photo, but do look at my fathers apron I am wearing...use corn starch to thicken the sauce, put a couple of tablespoons of cornstarch in the juice that you drain off the canned pineapple...



yummy, it's ready to combine



cook the sauce to thicken, the sauce consists of a half of a cup of chicken broth, many dashes of soy sauce and many dashes if oyster sauce...add the thickening ( cornstarch mix) and




then add the vegetables, fruit and chicken, cook until all hot and bubbly....


spoon over the rice and enjoy!


This was delicious, seriously delicious!!!!!
