Grown-up Pizza

This is not a pizza to serve kids...unless they are sophisticated urban kids and then maybe...but it is definitely for adults...has tons of flavor bursts! You can start with a pre-made pizza dough or make your own...they are both good...Give it a try you won't be sorry...


first you want to caramelize about a half a large onion...

then half cook about 10 sliced mushrooms...don't crowd the mushrooms


make your pesto spread...2 heaping tablespoons pesto and 1 tablespoon of olive oil and 3 garlic cloves chopped fine...mix all this together...


saute until mostly cooked 1/2 lb of italian sausage...(it will finish in the oven)


slice your fresh mozzarella cheese...


now you are prepped and ready to assemble...


whoops I almost forgot, you will need to slice up cherry tomatoes, I used heirloom tomatoes..

roll, roll, roll your dough, gently down the stream...just kidding....


put it in your pizza pan or if like me yours is at your daughters, use your cookie sheet....


brush the dough with your pesto, put it all on there...then I suggest unless you are on a salt free diet..putting sea salt over the top and fresh ground pepper....


put on your caramelized onion...

next mushrooms....


sausage next....I slipped in some goat cheese , not exactly needed but I had some...




next tomatoes.....then....


place your fresh mozzarella on the top....I added a little fresh rosemary, not necessary but good...
then bake in a 450 oven for 10-15 minutes....


SO GOOD....The smell is heavenly!!!!
