Pumpkin Ginger Cinnamon Rolls


Well everyone now has packages of fresh pumpkin in their freezer, right?
Here is one terrific wonderful thing to do with the pumpkin this holiday season...This is an easy recipe everything gets put together in the mixer....let the mixer do the kneading! You can mix it at night and get it all ready in the pans and bake it in the morning.......


                                   

Pumpkin Ginger Cinnamon Rolls

1 cup of canned or fresh pumpkin
2 eggs
1/4 cup of warm water
1/4 cup soft butter
2 1/2 cups of white flour
1 3/4 cups of wheat flour
1/4 cup of non-fat dry milk
1 teaspoon ground cinnamon
1/2 teaspoons ground ginger
3 tablespoons brown sugar
1 1/2 teaspoons of salt
2 teaspoons instant yeast
Filling
1 cup of butter
1 cup of brown sugar
1 teaspoon of cinnamon
1/2 cup of chopped candied ginger
1/2 cup of dried cranberries
iced topping
1 cup of powdered sugar
2 tablespoons of milk

put all the cinnamon roll ingredients in the mixer....

mix with the cookie dough beater until blended, then change to the dough hook and mix for 5-7 min


roll dough into ball and place in a large greased bowl and cover ...

wait until double, about 2 hours....

then put on cutting board and roll out into a rectangle, 12x17 approx....

pretty huh?

then mix the filling,........... softened butter.....

add cinnamon......

add brown sugar.....

spread liberally on dough...

reaching all the corners, leaving a few inches bare on one end...



get the cranberries and ginger ready and....



spread evenly over dough.....

like this.....

start at the filling end and roll up tightly...

keep going.....

and going.....

and going.....

until you get to the end....

mark into 1 inch wide slices....

and then cut into 12 or more rolls...

place in greased baking dish

Let rest in pan and again it will rise.....then bake in a 375 degree oven for 20-25 minutes

the house smells great! you could stop right here and just use it to make your house smell like cinnamon roll candles! They are gooey and sticky and carmelly...

now hurry and frost so you can eat one...

just make a standard glaze and drizzle over top....mixing powdered sugar and milk...
