Roast Beef Hash

This is Sunday, Pot Roast Day, the day to put the pot roast in the oven and go to church...since we all know how to make pot roast....right?......this is about the best part of Pot Roast.................

My favorite food growing up...hands down was Roast Beef Hash...I requested it once for my birthday, I remember being just a little girl and Mom asked me to choose something for my special dinner and I decided on Hash, I don't think I knew at that time it was made from left overs. I would say, if I was facing the gallows and could have my one last meal it would be Roast Beef Hash...It is the best meal of the Roast...you could go to the finest restaurant and get hash and it would not be the same as homemade roast beef hash...You MUST start with leftovers..

I come from a very large family and we often had lots of guests to dinner when I grew up. Mom always had room for one more, this is a recipe you can use the same amount of roast and feed 4 people or 12...just add more potatoes and onions...right Mom?

Now Roast Beef Hash is more of a procedure than a recipe....I learned how to make this from watching Mom many, many times do this....You must start with making Pot Roast for dinner on Sunday, with potatoes and carrots in it....and make plenty so you will have leftovers...




You take out your left over potatoes and carrots and roast and gravy from the fridge..

get out your onion....

and put on your nicest cowgirl bathrobe...and chop the onion...about 1/2 of a large

Chop your roast up into bite size pieces....

now chop up the potatoes and carrots...(it you dont have enough potatoes you can use fresh ones. You just have to cook them longer before you put in the meat)...

1 tablespoon of cooking oil over medium heat. in a skillet, cast iron works best..but of course I used my 'go to pan'

cook until onions are half doneish...

then put in your potatoes...and salt and pepper them good...

cook a few minutes...stirring often...then add your meat and salt and pepper the meat addition..

stir all together and now the hashish part...

see how the bits start to stick in the pan? this is good stuff...scrap the pan some and then put..

about a tablespoon of water in that spot...no more that that..
and continue that process...for about 5 minutes..waiting until it sticks not burn and a little water...the water creates steam that helps cook the hash and brings it together...

make a well in the middle of the pan and put your left over gravy in there...(should have taken a picture, no excuse I just got busy and forgot)

cook the gravy in the 'hole' until it softens up and starts to heat up then stir in...keep frying some more until it reaches the thickness you want.....

Now this is good Eats !!!!

  2. Always a good choice for leftover roast! Mom always cooked it, just like you say here, and now I do! This is one of my favorite comfort foods!
