Raspberry Coconut Cobbler



We in the Puyallup Valley usually have a freezer full of raspberries...this is a recipe you can make from frozen raspberry's as well as fresh....It is a great Christmas dessert...and to pair it with coconut the only thing better would be add chocolate! I guess you could have this with hot cocoa...that would be the ticket!!!


This is an old Swedish recipe.....you start with 3 cups of raspberries, add in 4 tablespoons of sugar, 2 tsp if flour....and  1 tablespoon of grated lemon peel.

next butter a small baking dish...

put the berries in the buttered pan...


now start the topping, 1/2 cup of sugar....1/2 cup of flour...and 1/2 cup of butter....


mix all together to pea size, a pastry blender works best for this, then add 1/2 cup of shredded coconut
and put on top of the berries....


put in 375 degree oven for approx. 30 minutes until the topping is browned...


Like this, cool for 30 minutes and serve!


I put greek yogurt on mine but soft whipped cream would be great too!
