Marshmallows




Have you ever made marshmallows? I hadn't and had always wanted to. Just the rustic look they have to them, the larger square cut and how they look in hot chocolate....they are very expensive to buy in specialty shops.. and they would make a very nice gift to give when going to a dinner party....I will share with you how to make them and then tomorrow will  show you how they look 'made' . They must set a least 12 hours or overnight before you cut them.


Here is a list of ingredients:


2 cups sugar
1 tbls white corn syrup
3/4 cups water
4 envelopes unflavored knox gelatin
1 tbls vanilla
3/4 cups water
2 egg whites
1/2 powdered sugar
1/2 cups cornstarch





gather your ingredients



take your large baking dish and line it with foil and spray with cooking spray. Mix your powdered sugar and cornstarch together and use a sifter and sprinkle on the sides and bottom of the baking dish. This will keep the marshmallows from sticking...



put the sugar and the corn syrup in a heavy saucepan and...



add the 3/4 cup water...and stir together dissolving the sugar...cook over medium heat...





add the candy thermometer and cook till hardball stage....no need to stir...while this is cooking, you will have plenty of time to get the next steps ready...



take a small saucepan and put 3/4 cup of water in pan add 1 tablespoon of vanilla






add 4 envelopes of Knox Gelatin...unflavored...










stir and let set for 5 minutes, looks a little like applesauce at this point...  and turn the burner on low and stir constantly...until clearish..this is the point, if you like, you can add different flavoring and colorings, like peppermint and pink food coloring....

it has foam on top and is slightly brown (from the vanilla) but becomes clear like..  




when the candy thermometer reaches about 240 , you can start whipping the eggs 
 

 ...place 2 egg whites in the mixing bowl...



and whip until the eggs are ...



foamy but not dry...



When your candy thermometer reaches 260 or hard ball stage...turn off the burner...and..



take the gelatin mix and



pour the gelatin mixture into the sugar mixture....stirring constantly...



it will foam up....just stir it down...






pour the hot mixture in a slow steady stream into the egg mixture, while the mixer is at a low speed



when finished turn up mixer to almost high and mix for 5-10 minutes until very fluffy and opaque








put the mixture into your prepared pan....



smooth the top down...



let set for several hours or overnight.......


spinkle the powder sugar mixture on a board

turn the marshmallows out onto the sugared board


 and cut with warm knife to cubes (you can heat the knife right on the burner turned on low)


 and store for up to 1 week...




I would like you to meet my granddaughter who is my little helper and photographer on many of my blogs....she took all the pictures today, didn't she do a great job?..she is 11 and is on her way to a career....Guess what she is getting for Christmas? shhh Don't tell her..
