Roasted Butternut Squash

This is a great and easy side dish for this time of year. You can get butternut squash for 2 for $1 at most farm stands....Buy many and keep in a cool place, they will keep for months.





Just peel and cut in 1 inch cubes and put in a shallow baking dish, pour in 1 tablespoon olive oil and 2 tablespoon maple syrup. Sprinkle with kosher salt and stir all together,  bake for 25 minutes at 450 degrees, turning once, halfway during the cooking.






That is it! Very buttery and flavorful! I roasted a pork tenderloin at the same time and sauteed swiss chard to go with the squash, I love the colors together.......(my grandaughter set the table, don't you love the knife, fork and spoon?)
